Is it ‘Specialty’ or ‘Speciality’ Coffee?

Both “specialty” and “speciality” are correct, but their usage varies by region. In the context of coffee, “specialty coffee” is the more widely used term globally, especially within the industry itself. This term signifies coffee that meets high quality standards throughout the production process, from harvesting to brewing. The preference for “specialty” over “speciality” in this context is largely due to the influence of the Specialty Coffee Association (SCA), an influential organisation in the coffee world, which uses the American spelling. Therefore, while both terms are understood, “specialty coffee” is more accurate and widely accepted in the industry.

In British English, “speciality” is more commonly used to refer to a product or service that is known for being of high quality, or an area in which someone or something excels. It denotes a distinguishing feature or quality that makes something particularly interesting or attractive. For example, a chef might be known for a particular dish that is their speciality, indicating it is what they are best at making or is especially popular among patrons.

Similarly, in professional contexts, “speciality” can refer to a person’s area of expertise or specialisation, particularly in fields such as medicine, academia, or business. A doctor, for example, might have a speciality in cardiology, meaning that their primary expertise and focus is on treating heart conditions.

What is TDS and how does it affect coffee brewing?

TDS, or Total Dissolved Solids, is the measure of the combined content of all organic and inorganic substances in water, including minerals, salts, and other dissolved compounds. It plays a significant role in coffee brewing but does not account for water pH, which is also a crucial factor in extraction efficiency. The composition of minerals in the water, which TDS does not measure, can significantly affect the coffee brewing process

Do the minerals in water affect coffee brewing?

The key minerals that impact coffee brewing include calcium, magnesium, and bicarbonate. These minerals influence the extraction process, flavor profile, and can have an effect on the coffee brewing equipment. An appropriate balance of minerals and alkalinity can enhance flavour extraction and provide a well-rounded taste, while an imbalance can result in off-flavors and problems with brewing equipment.

Do dark roasts produce more crema than light roasts?

Darker roasted coffee might produce a more noticeable crema initially due to the higher CO2 release, oil content, and more soluble compounds. However, this doesn’t necessarily mean that darker roasts produce more crema or a better-quality crema than light roasts. The crema’s quality, stability, and volume depend on various factors, including the type of coffee, roast level, and freshness.

What is the difference between commercial coffee and specialty coffee?

Specialty coffee stands apart for its exceptional quality and traceability, often scoring 80 points or above on a 100-point scale used by coffee experts. It’s produced using high-quality beans sourced from specific microclimates, ensuring unique flavour profiles. The focus is on sustainable farming practices, ethical sourcing, and meticulous processing to preserve distinct tastes and aromas.

In contrast, commercial coffee typically involves mass-produced beans aimed at cost-efficiency and consistency through ‘darker roasting’ protocols, often at the expense of flavour and ethical sourcing. This coffee might blend beans from various origins, prioritising volume over the nuanced qualities prized in specialty coffee.

Thus, specialty coffee offers a richer, more ethical, and diverse tasting experience compared to its commercial counterpart.
